The mother (white) is the bechamel. Here is the vegan version:

Vegan Bechamel

2 c soy milk
1 1 / 2 c water
1 / 4 C Cashew
1 sea salt t
Pepper 1 / 8 White T
Pinch of nutmeg
1 tablespoon olive oil / 4 C cooking, preferably
Sesame or corn oil
1 / 2 c Unbleached Flour

Combine soy milk, water, cashew nuts, spices and
Mixer until fluffy. Pour into a double boiler and heat (or bowl over a medium saucepan).

Meanwhile, oil in a saucepan. Add
Flour, so that a roux. Then, in the dress, which heats
the mixture of soy milk to the light, creamy sauce. For
thick sauce, use more roux.

When Alfredo is that you're looking to do, here's the vegan version of the following:

Alfredo sauce substitute

1 until 12.3 ounces pkg. Mori-Nu silken style tofu, firm or extra firm
2 cups soy milk, rice, milk or dairy milk of choice
1 T. onion powder
1 / 2 t. Garlic powder
1/ 2 t. Salt
Pinch cayenne pepper
Pinch of grated nutmeg
1 cup soy Parmesan cheese

In a food processor or blender, place all ingredients except soy Parmesan cheese, and stir for 2 minutes to a smooth puree. Give the dough into a small saucepan and let simmer, while stirring constantly, until hot. Remove from heat and add the soy parmesan. Taste and adjust seasoning if necessary. Use as a sauce for pasta, vegetables or cereals.

Yield: 4 cups

I hope the recipes work. Happy Cooking!

Use soft tofu, mix in a blender and heat to simmer. Use soy cheese tastes a little give and all the herbs you want.
